Microgreen Varieties

Microgreens are tiny, but mighty! They are nutrient dense and are a concentrated source of various vitamins, nutrients, and antioxidants. In fact, evidence shows that microgreens can contain up to 40 times more vitamins and minerals than fully grown vegetables. Microgreens are harvested in the seedling state, making them especially fresh and flavorful. They are easy to add on to virtually any dish and provide numerous health benefits.

Pea Shoots

Flavor Profile: Pea shoots are sweet, with a similar flavor to sugar snap peas and have a light, crisp, and crunchy texture.

Health Benefits: Pea shoots are a  great sources of folate, magnesium, carotene, and phosphorus. They are also high in vitamin A, B6, and C.

​

How To Use: Add into a salad, top a burger or a taco, or toss into a smoothie. Pea shoots are great in almost anything!

Broccoli

Flavor Profile: Broccoli microgreens have a slightly sweet and nutty flavor. They are tender and crunchy with a much milder taste than full grown broccoli.

Health Benefits: Mirco broccoli contains folate, potassium, manganese, and iron and is high in vitamins A, B, C, E, and K.

​

How To Use: Top a pizza, mix into a salad or stir fry, or garnish almost any dish. Broccoli microgreens are even popular for juicing or smoothies.

Radish

Flavor Profile: Radish microgreens have a pleasant peppery taste and add a fresh crunch and spicy flavor.

Health Benefits: Micro radish is abundant in iron, potassium, phosphorus, calcium, and zinc. It contains high levels of vitamin B3 and B6 and vitamins A, C, E and K.

How to Use: Layer on a sandwich, season soups, add to a stir fry, or top avocado toast. Add radish microgreens anywhere you need a little spice!

Sunflower Shoots

Flavor Profile: Sunflower shoots have a mild, slightly sweet, and nutty flavor and a crunchy texture.

Health Benefits: Sunflower shoots are a complete source of amino acids and also contain iron, calcium, and healthy fats.They have high levels of vitamin A, B6, C, and D.

​

How to Use: Add to a sandwich, wrap, salad, soup, or top scrambled eggs. These are the go-to microgreen and can be added to just about anything!

Cantaloupe

Flavor Profiles: Cantaloupe microgreens are soft and tender, with a slightly sweet and delicious fresh cantaloupe taste and smell.

Health Benefits: Micro cantaloupe are high in antioxidants, fiber, and vitamins A, C, E, and K.

How to Use: With their fruity flavor, cantaloupe microgreens are great to add to a fruit salad, a smoothie, or even on top of a bowl of ice cream.

Amaranth

Flavor Profile: Amaranth microgreens are mild and sweet with a crisp and crunchy texture. They also are the most vibrant red/pink of any microgreen.

Health Benefits: Amaranth contains protein, calcium, iron, and beta-carotenes and is high in vitamin C, E, and K.

How to Use: Cook amaranth in a stir fry or sauce, or use it as a colorful garnish for soups and salads. Amaranth is also used in sushi and in desserts.

Salad Mixes

Flavor Profiles:

Basic: A mix of broccoli, kale, kohlrabi, arugula, and cabbage resulting in nutty and fresh flavors with mild spice.

Spicy: A mix of broccoli, kale, kohlrabi, arugula, red cabbage, and mustard adding a spicy kick to the fresh flavors.

​

Health Benefits: These mixes are high in antioxidants, fiber, potassium, iron, copper, and beta-carotenes and are a good source of vitamin C, E, and K.
